The domaine is located in a small village facing Sancerre hill. Domaine Naudet is a family winery, Michel Naudet is the 4th generation wine maker. The Domaine covers 16 ha with 12.5 ha planted with Sauvignon Blanc and 3.5 ha of Pinot Noir. The vineyard is planted on 3 different soils: “Les Terres Blanches” where the soil is clay and limestone, gives strong and powerful wines. “Les Terres Caillottes” have more stones and are giving fruity and fine wines. “Les Terres Silex” is a more sandy soil with flint stones which leads to wine with a specific bouquet, typical stone flavor and exceptional minerality. Each terroir is vinified alone in steel temperature controlled tanks. Short pruning and low yields are practiced in order to achieve highly concentrate aromas. For white, the Sauvignon grapes are slowly pressed and the collected juice stays in steel tanks for 24 hours for the first must settling. Then slowly the alcoholic fermentation starts. The wine stays on its fine lees all winter. The bottling is done beginning of the next year. Red wine is made from Pinot Noir grape variety. Cold maceration of the grapes is then followed by slow alcoholic fermentation. After 2 weeks, the grapes are pressed and the collected juice stays in tank until bottling around march of the next year.
